Shopping hours in big towns and cities are usually from around 10 am to 8 - 10 pm. Shops in cities and big towns are often open seven days a week. Smaller towns will have more limited opening hours. Banks are open from 9 am to 5 pm in many cities and big towns, and some branches open Saturday mornings. Museums tend to have specific opening hours and usually close for a day in the week (often Mondays, not always) - so it's best to check beforehand if you want to visit a specific museum.  Archaeological zones are open from 8 am to 5 pm, and all except those in the most frequented tourist areas (e.g., Chichen Itza) are closed on Mondays. Please note that Mexico celebrates several public holidays throughout the year. Opening hours might differ on those days, also in restaurants.
